Afternoon Tea at The Oberoi, New Delhi with Chef Pablo Gicquel

I recently had the pleasure of attending the exclusive afternoon tea at 360° at The Oberoi, New Delhi, where the celebrated Executive Pastry Chef Pablo Gicquel from Mandarin Oriental, Bangkok presented his creations as part of the Oberoi & Mandarin Oriental (O&MO) Alliance. It was more than just afternoon tea—it was a carefully staged performance of taste, aroma, and atmosphere.

Stepping into 360° felt like entering an elegant salon. Sunlight streamed through tall windows, catching the glint of polished silverware. The quiet clink of fine china, the soft rustle of linen napkins, and the gentle hum of conversation set the tone for indulgence. Soon, the air filled with the aroma of freshly brewed teas, mingling with the buttery scent of warm pastries arriving from the kitchen.

The journey began with single-origin coffees and loose-leaf teas, poured with quiet ceremony. Then came an irresistible spread of artisanal pastries that blended Chef Pablo’s French heritage with contemporary flair. His Rhubarb and Jasmine Tea Flan was delicate and perfumed, the Pistachio Cookies nutty and melt-in-the-mouth. The Red Berries Yoghurt Tartlet struck a perfect balance between tart and creamy, while the Milk Chocolate & Pecan Nut Cake and Strawberry Love Cake offered comforting sweetness with refined textures.

And then, the heart of any true afternoon tea—the scones. Still warm, golden, and fragrant, they arrived with generous bowls of clotted cream and jewel-toned preserves. Crumbly yet soft, each bite was a little moment of nostalgia, evoking the timeless rituals of European tea rooms while perfectly suited to this New Delhi setting.

As I savoured each creation, Chef Pablo’s words resonated: “I take great pleasure in crafting delightful experiences for discerning guests; bringing a nostalgic taste from the cobbled streets of France to bustling cities such as Bangkok, and now New Delhi.”

This collaboration between The Oberoi and Mandarin Oriental truly delivered on its promise: not just indulgence, but an elegant journey through taste, memory, and culture—one I will remember every time I think of the scent of fresh scones and the sparkle of afternoon tea at 360°.
