
Boiling eggs is one of the simplest cooking tasks, but peeling them can be surprisingly frustrating. Many people find that the shell sticks to the egg white, causing it to tear and ruining the smooth surface. This problem tends to be even more common when the eggs are very fresh.

Luckily, two easy tricks can make all the difference. With a couple of small changes to how you boil your eggs, the shells will come off effortlessly, leaving you with neat, perfectly peeled eggs every time.

1. Add Salt While Boiling: Start by adding a teaspoon of salt to the water when boiling your eggs. This small step has more benefits than you might expect.

Firstly, it helps prevent cracking. If an egg does develop a small crack while boiling, the salt allows the egg white to harden quickly, sealing the crack and stopping the contents from leaking out.

Secondly, salt helps loosen the membrane between the egg white and the shell. This makes it much easier to peel the egg cleanly once it’s cooled.

2. Use an Ice Water Shock After Boiling: The most important step comes right after the eggs are cooked. Once they’re done boiling, immediately transfer them into a bowl of cold or ice water. This sudden drop in temperature, often called a ‘thermal shock’, causes the egg white to contract slightly and pull away from the shell. As a result, the air pocket between the shell and the egg white becomes larger, making the shell far easier to remove.

For best results, leave the eggs in cold water for five to ten minutes. Once cooled, gently crack and peel them. You’ll find the shells come off in almost one piece, without damaging the egg.
