For those who love South Indian cuisine, corn idli is a recipe worth trying. With the sweetness of corn grains paired with the subtle taste of semolina, this dish strikes a perfect balance. Its unique flavour has made it a favourite among both children and adults.

A Healthy, Low-Oil Option

In this increasingly health-conscious time, finding a breakfast option that is both tasty and nutritious is key. Corn idli requires a small amount of oil, making it light, low in calories, and easy to digest. This makes it an excellent choice for those who prioritise fitness and well-being.

Ingredients for Corn Idli

  • 1 cup Semolina (Rava)
  • ½ cup Curd
  • 1 cup Corn (boiled and grated)
  • 1 tsp Ginger paste
  • 1 Green chilli (finely chopped)
  • Salt to taste
  • Water as required
  • 1 tsp Fruit salt or Eno
  • Oil for greasing

Method of Preparation

  • Start by mixing semolina and curd in a bowl. Add the boiled and grated corn, ginger paste, green chilli, and salt.
  • Gradually add water to make a smooth batter and let it rest for about 10 minutes.
  • Meanwhile, preheat the idli steamer or cooker. Just before steaming, mix in the fruit salt or Eno gently.
  • Lightly grease the idli moulds, pour in the batter, and steam on low flame for 10 to 12 minutes.
  • Once cooked, carefully remove the idlis from the moulds.

Serve hot corn idlis with coconut chutney or steaming sambar. Light yet filling, this wholesome dish not only makes breakfast special but also keeps you energised throughout the day.
